The story of Papayo begins in the fertile, coffee-rich landscapes of San Adolfo, a region celebrated for producing some of Colombia's most exquisite coffees. This unique variety emerged as a serendipitous gift from nature, capturing the attention of local farmers. Its name, "Papayo," is inspired by its elongated beans, which strikingly resemble the shape of a papaya fruit. While its distinctive physical appearance might remind you of the Pacamara variety, Papayo truly distinguishes itself with its unparalleled sweetness and intricate floral complexity.

This exceptional coffee undergoes a meticulous 45-hour aerobic fermentation. This method is carefully chosen to enhance the coffee's inherent qualities, yielding a cup that's rich, complex, and deeply expressive of its origin.

Following fermentation, the cherries are carefully spread in thin, even layers on raised beds. This allows for optimal airflow and consistent exposure to sunlight. Throughout this crucial drying phase, the cherries are continuously monitored and turned regularly. This vigilance ensures uniform drying, preventing any over-fermentation and ultimately preserving the coffee's pristine flavour.
